Black Bean Brownies

 This is a great way to get extra black beans into your diet. My kiddos LOVE these, and they are very easy to make. These are delicious, so chocolatey, and 100% plant-based. Here is the recipe:


Ingredients: 
  • 2 cans of black beans drained and rinsed
  • 2 flax eggs (2 tablespoons flax mixed with 6 tablespoons water and left to sit for 5 minutes)
  • 1/2 cup olive oil
  • 2 teaspoons vanilla
  • 1/2 cup flour
  • 3/4 unsweetened cocoa powder
  • 1.5 cups sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup vegan chocolate chips (save some extra to sprinkle on top)
Directions:
  • Add the black beans, flax egg, and vanilla to the food processor until the beans are smooth
  • Stir in the olive oil
  • Mix the rest of the ingredients together in a large bowl until fully combined
  • Pour batter into a large casserole dish (greased if needed) and sprinkle vegan chocolate chips on top
  • Bake at 350 degrees for 40 minutes
  • Cool, cut into bars, serve, and enjoy!
