Black Bean Brownies
This is a great way to get extra black beans into your diet. My kiddos LOVE these, and they are very easy to make. These are delicious, so chocolatey, and 100% plant-based. Here is the recipe:
Ingredients:
- 2 cans of black beans drained and rinsed
- 2 flax eggs (2 tablespoons flax mixed with 6 tablespoons water and left to sit for 5 minutes)
- 1/2 cup olive oil
- 2 teaspoons vanilla
- 1/2 cup flour
- 3/4 unsweetened cocoa powder
- 1.5 cups sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup vegan chocolate chips (save some extra to sprinkle on top)
Directions:
- Add the black beans, flax egg, and vanilla to the food processor until the beans are smooth
- Stir in the olive oil
- Mix the rest of the ingredients together in a large bowl until fully combined
- Pour batter into a large casserole dish (greased if needed) and sprinkle vegan chocolate chips on top
- Bake at 350 degrees for 40 minutes
- Cool, cut into bars, serve, and enjoy!
