Irish Soda Bread Scones - Loquats
This is my classic vegan Irish Soda Bread Scone recipe. I make these scones every year around the Spring Equinox or St. Patrick's Day. This year, I added wild loquats from our neighborhood. They were delicious... here is the recipe!
Irish Soda Bread Scones (with Loquats)
- 2 1/2 cups flour
- 1/2 cup whole wheat flour
- 1/2 cup sugar
- 2 teaspoon baking powder
- 1.5 teaspoon soda powder
- 1 teaspoon sea salt
- 1 1/2 cups loquats (pitted and chopped) [can sub currants or raisins]
- 8 tablespoon cold vegan butter cubed (1 stick)
- 3/4 cup oat milk
- 1 tablespoon apple cider vinegar
Directions:
- 1. Mix all of your dry ingredients
- 2. Whisk your oat milk and ACV to make a vegan buttermilk and set aside to rest
- 3. Add in your loquats and coat in the flour by hand
- 4. Cut your butter into cubes and then use your fingers to mash/ mix it with your dry mixture
- 5. Add the vegan butter milk and mix by hand until your have a dough flaky enough to shape (add more oat milk as needed)
- 5. Shape your dough into round disk and place them on a baking sheet
- 6. Cut an "x" onto the top of your soda bread
- 7. Bake at 350 for 25-30 minutes until the top is golden brown
- 8. Cool and enjoy!
