Cinnamon Harvest Muffins
Here is a delicious recipe for Vegan Cinnamon Harvest Muffins.
Note: We usually use a mortar and pestle to grind up the whole grains by hand. It is symbolic of the grains harvested in the fall for Samhain (Celtic Halloween) -- you can use any you'd like: barley, bulgur, millet, oat, buckwheat, rice... etc.
Ingredients:
- 1 1/2 cups whole wheat flour
- 1/4 cup ground grains of your choice (or you may simply use additional flour - I used ground barley and oats)
- 4 teaspoons baking powder
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg or pumpkin spice
- 1/2 teaspoon salt
- 1 cup sugar
- 2 flax eggs (1/4 cup flax and 1/2 cup water)
- 1 cup plant milk
- 1/2 cup melted vegan butter or olive oil
- equal parts cinnamon and sugar for topping
- coconut oil to grease baking stone
Directions:
- Mix dry ingredients (flour, grains, salt, baking powder, cinnamon, spice)
- Mix wet ingredients (flax eggs, plant milk, vegan butter, sugar)
- Combine together and stir gently
- Coat your muffin stone or baking pan with coconut oil
- Fill each cup 3/4 full
- Sprinkle the tops with cinnamon sugar mixture
- Bake for 15 minutes at 375 (or until done)
