Red Chard Curry Wrap
This is my favorite way to eat red chard. We got a beautiful bunch from the co-op, and made this delicious meal... here is the recipe.
Red Chard Wrap
Ingredients:
- 1 bunch of fresh red chard
- 1 cup sliced mushrooms
- 1 can chickpeas drained and rinsed
- 5-10 cherry tomatoes cut in half
- 2 green onions
- 1 corn cob (cut from the cob)
- 2-3 tablespoon of favorite curry powder (we used vindaloo)
- 1 cup coconut milk
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- salt and pepper to taste
- sesame seeds for garnish (optional)
- olive oil
Directions:
- 1. Wash the red chard, dry it and cut the leaves off (these will be your wraps)
- 2. Chop the stems into bitesize pieces (include any small leaf pieces you have to the curry)
- 3. Chop your green onion stems (save the chopped tops for garnish)
- 4. Combine the chard stems, chickpeas, green onion stems, and corn
- 5. Drizzle them with olive oil in a large saucepan and sauté while stirring until the onions are clear
- 6. Add the mushrooms and cherry tomatoes and continue sautéing until the mushrooms start to release their juice
- 7. Combine the coconut milk, curry powder, garlic and onion powder and pour into the saucepan
- 8. Cook everything together until curry mixture is thick
- 9. Season with salt and pepper
- 10. Spoon mixture into the leaves and garnish with green onion tops and sesame seeds
- 11. Enjoy!
