Vegtable Arepas

 This vegan dish is delicious and surprisingly quite simple!



Ingredients:

Roasted Vegetables 
  • Any veggies you'd like (mushrooms, asparagus, and onion shown here)
  • Olive oil
  • Garlic powder
  • Sea salt
  • Black pepper
Arepas
  • 2 1/2 cups masarepa (if you only have cornmeal use 2 cups cornmeal and 1/2 cup flour)
  • 2 cups water
  • 1 tablespoon sea salt
  • 1 tablespoon maple syrup
  • olive oil or vegan butter for cooking



Directions:

Roasted Vegetables
  1. Chop vegetables and lightly coat them in olive oil
  2. Sprinkle with salt, pepper, garlic powder and toss
  3. Roast at 375 degrees for about 45 minutes
Arepas
  1. Mix masarepa and salt, then stir in the water slowly
  2. Next stir in the maple syrup
  3. Form round thick cakes with your hands
  4. Cook each side in a pan with oil or on a griddle, just like a pancake... until dark brown
Serve: You may cut the arepas if they are thick enough and stuff them like a pita, or layer them and top with your favorite hot sauce. (We used Aframe Datil Pepper Sauce from St. Augustine)
