Vegtable Arepas
This vegan dish is delicious and surprisingly quite simple!
Ingredients:
Roasted Vegetables
- Any veggies you'd like (mushrooms, asparagus, and onion shown here)
- Olive oil
- Garlic powder
- Sea salt
- Black pepper
Arepas
- 2 1/2 cups masarepa (if you only have cornmeal use 2 cups cornmeal and 1/2 cup flour)
- 2 cups water
- 1 tablespoon sea salt
- 1 tablespoon maple syrup
- olive oil or vegan butter for cooking
Directions:
Roasted Vegetables
- Chop vegetables and lightly coat them in olive oil
- Sprinkle with salt, pepper, garlic powder and toss
- Roast at 375 degrees for about 45 minutes
Arepas
- Mix masarepa and salt, then stir in the water slowly
- Next stir in the maple syrup
- Form round thick cakes with your hands
- Cook each side in a pan with oil or on a griddle, just like a pancake... until dark brown
Serve: You may cut the arepas if they are thick enough and stuff them like a pita, or layer them and top with your favorite hot sauce. (We used Aframe Datil Pepper Sauce from St. Augustine)
